Seasonal Spotlight: Beans!

Summer is in full swing and many veggies are now ready to harvest in Nova Scotia gardens, including beans. Beans are an excellent source of fibre, B vitamins, antioxidants and protein. If you have ‘bean’ looking for a way to eat more legumes, here are some tips to help you get started.
Tasting Notes
Did you know that there are over 400 varieties of beans grown around the world? White beans tend to have a starchy and nutty taste and are usually eaten after adding spices. Red beans have a more prominent earthy flavour.
Here are some tips to include these beans in your daily life:
Red beans can be added to classics like chilli, to add more fibre into your meals, or as a replacement for meat.
White beans can be boiled and added to a salad to make it healthier and tastier.
Mash beans to put over toast for a great breakfast alternative to regular spreads.
Add beans to your salsa for a protein-packed snack for your next family fun night.
Local pole and bush beans come in all colours (such as green, yellow and purple) and make great snacks straight out of the garden, or find them at your local farm market.
