Loaded Baked Potatoes

Ingredients

2 lbs (1 kg) Baked Potatoes

½ Cup (125 mL) Canned black beans, rinsed & dried

¼ Cup (60 mL) Medium salsa

⅔ Cup (160 mL) Cheddar cheese, grated

Optional top with cilantro

Directions

Potatoes

  1. Preheat the oven to 375°F.

  2. Grease 11” x 17” sheet pan with canola oil.

  3. Cut each potato in half lengthwise. Lay the potato halves face side down on the sheet pan.

  4. Bake for 45 minutes to an hour, until a fork inserts easily into the centre.

Black Bean Topping

  1. In a pot on the stovetop, heat the beans and salsa until warm.

  2. Top each potato with 2 Tbsp (30 mL) of the warm bean/salsa mixture, 1 Tbsp (15 mL) of the cheese, and cilantro (if desired).
