Sweet Potato

 

Basic Information

  • In Nova Scotia, the sweet potato harvest starts in the middle of September and continues through October. 

  • Sweet potatoes are great sources of potassium, vitamin A and beta-carotene. 

  • Sweet potatoes are sometimes called yams in casual conversation, but yams are actually a different vegetable with a completely different flavour profile!

 
 

Storage, Preservation, Preparation and Cooking

  • Sweet potatoes are best stored between 10-16°C in a dry, dark place with good air circulation.

  • Wash sweet potatoes before eating and keep the skin on to get the additional benefits of fibre!

  • Sweet potatoes can be boiled, baked, roasted or mashed like regular potatoes, but they are also great added to salads. Sweet potatoes can also be used to thicken sauces or soups, or to sweeten dishes.
