Tabbouleh
Ingredients
½ cup (125 mL) Fine Bulgur
1 bunch Parsley
10 Mint leaves
½ Small Cucumber
3 Green Onions
2 Small Tomatoes
¼ cup (60 mL) Lemon juice
½ cup (125 mL) Olive oil
1/2 tsp Salt
Directions
Place bulgur in a bowl and cover with just-boiling water. Leave to soak for about 20 minutes.
In the meantime, roughly chop the cucumber, green onions, tomatoes and herbs and add to a large bowl.
Add in lemon juice, olive oil, salt, and cooked bulgur and stir to combine.
Enjoy as a salad or as a dip with pita bread.
