Hummus in a Bag

Adapted from FoodShare’s Cook Off the Grid: https://foodshare.net/program/educator/

Yield: 6 servings

Ingredients

1 Can ( 540 mL) Chickpeas

2.5 Tbsp (40 mL) Olive oil

3 Tbsp (45 mL) Lemon juice

3 Tbsp (45 mL) Tahini

½ tsp (2 mL) Salt

2 large plastic zip-top bags

Directions

  1. Place one bag into another.

  2. Open chickpeas and reserve the liquid. Pour the drained chickpeas into the inner bag.

  3. Add in all other ingredients. Seal both the inner and outer bags.

  4. Using hands or a rolling pin, squish the mixture until fairly smooth and combined. If the mixture looks dry, add in a small amount of chickpea can liquid.

  5. Remove the inner bag from the outer bag. Either scoop out hummus with a spoon or snip a hole in the bottom of the bag and pipe it out. Enjoy with pita or raw vegetables.
