Orzo Soup
Ingredients
1 lb Chicken, chopped (see note below around Halal meat)
1 Onion, chopped
1 Tbsp (15 mL) Oil
½ Cup (120 mL) Cilantro, chopped
½ Cup (120 mL) Parsley, chopped
1 Tomato, chopped
½ Cup (120 mL) Tomato paste
½ Cup (120 mL) Orzo
2 tsp (10 mL) Dried mint
1 tsp (5 mL) 7 spice blend
1 tsp (5 mL) Salt
¼ tsp (1.25 mL) Turmeric
¼ tsp (1.25 mL) Paprika
1 Serrano chili pepper (or 1 Jalapeño)
Salt & pepper to taste
Directions
Add oil to a medium pot on medium-high heat. Once oil is hot, sauté onion until soft. Add the chopped chicken and sauté.
Once the meat is cooked, add in the chopped tomato, chili pepper and tomato paste. Sauté for two minutes before adding the spices, salt, and half your chopped cilantro, parsley, and dried mint.
Stir in two cups of hot water. Bring to a boil and then reduce heat to medium-low to simmer for 10-15 minutes. Keep adding hot water 1 cup at a time as you simmer the soup until it is the desired texture.
Add the orzo and cook for ten minutes. Serve with the cilantro, parsley, and dried mint you set aside and salt and pepper to taste.
