Hummus
Adapted from Cooking Classy with a Sparkle of Fancy.
Yield: 6 servings
Ingredients
1-2 cloves Garlic
2 ½ Tbsp (40 mL) Olive oil
1 - 15 oz (540 mL) can Chickpeas, drained and rinsed
3 Tbsp (45 mL) Lemon juice
3 Tbsp (45 mL) Tahini
½ tsp (2 mL) Salt
Optional 1 tsp (5 mL) Red pepper flakes
Directions
Add chickpeas, lemon juice, tahini and salt to a food processor. Pulse for 2 minutes. Scrape down the sides and add the olive oil and garlic. Pulse until smooth.
Transfer to an airtight container an store in the refrigerator.
Garnish with a sprinkle of red pepper flakes (optional).
Serve with your favourite vegetables, crackers or pita.
