Seasonal Spotlight: Rhubarb!

Spring is finally here in Nova Scotia and with it, the first signs of fresh, local produce. Rhubarb is making its debut and we could not be more excited to help you incorporate it into some lively springtime dishes.

Tasting Notes

Rhubarb is tart and a bit sweet, with a crisp, celery-like texture. Despite being a vegetable, it is usually seen in desserts paired with sweet fruits like strawberries. However, rhubarb is surprisingly versatile and has a lot to bring to the table beyond the classic pie or crumble. Here are some of our favourite ways to use rhubarb:

-  Roast or grill and add to a salad instead of roast carrots or beets

-  Use fresh in a salsa and pair with meat like pork

-  Stew alongside chicken and bold spices for a rainy spring day

-  Pickle with warm aromatics like cloves or star anise and pair with cheese or grilled steak

-  Bring rhubarb to breakfast with these Rhubarb Raspberry Muffins

 
 

Picking your Produce

Check out this list of markets in Nova Scotia from Farmers’ Markets of NS to pick up some rhubarb in your area, or have it delivered.  

Rhubarb can also be grown in the garden. Stalks are ready to harvest once they reach 20cm long and 2cm wide. Pull the stalk from the base, rather than cutting it, and make sure to remove the toxic leaves and compost them.
