Mashed Potatoes and Parsnips
Adapted from Canadian Living.
Yield: 4 servings
Ingredients
3 Parsnips, peeled & chopped
2 Potatoes, peeled & chopped
3 Garlic cloves
2 Tbsp (30 mL) Butter
½ tsp (2 mL) Dijon mustard
¼ tsp (1 mL) Salt
Directions
In large saucepan of boiling salted water, cook parsnips, potatoes, and garlic until tender, about 15 minutes. Drain and return to pan.
Using potato masher, mash with butter, mustard and salt until smooth.
