Adapted from https://www.ohmyveggies.com/soft-and-chewy-spiced-apple-rings/
Ingredients
1 Apple (such as Honeycrisp, Pink Lady or Cortland), thinly sliced
Optional spices, such as this chai spice blend:
¼ tsp (1.25 mL) Ground cinnamon
⅛ tsp (0.6 mL) Ground ginger
⅛ tsp (0.6 mL) Ground cardamom
Pinch of ground cloves
Pinch of ground nutmeg
Directions (Oven)
Preheat the oven to 200°F for crispy or 225°F for chewy.
Wash, slice bottom of apple for flat base, core, and thinly slice the apple into rings. Slice between ⅛” to ¼” thick.
Place rings in a bowl, add desired spices and use your hands to gently toss to coat.
Arrange slices individually on parchment-lined baking sheets and bake.
Crispy: Bake approximately 2 hours. Ready when a single apple chip removed from the oven is crisp when set out at room temperature for 2-3 mins. Turn off the oven and let the apples cool in the oven for 1 hour.
Chewy: Bake approximately 1-1 ½ hours, or until they are dried and shrivelled but still tender.
Note: Baking times will vary depending on how thick your slices are, so check your apple rings often!
Directions (Dehydrator)

Dip slices in lemon juice, arrange individually on trays and sprinkle with spices if desired.
Use medium heat (135°F/57°C) and dry for 7-12 hours (dehydrator times will vary).
