Ingredients

  • ¼ Cup (60 mL) Margarine or butter
  • ½ Cup (125 mL) Green onion, finely chopped
  • 3 Eggs
  • 1 Cup (250 mL) Whole wheat flour
  • 1 Cup (250 mL) Milk
  • ½ lb (227 g) Spinach
  • 2 Cups (500mL) Cheddar cheese, grated
  • ½ tsp (3 mL) Salt
  • 1 tsp (5 mL) Baking powder

Directions

  1. Preheat oven to 350°F. Grease a 9”x13” baking pan.

  2. Melt ¼ cup of margarine in a small pan. Add the green onion and sauté until soft.

  3. In a bowl, beat the eggs; add the sautéed onions, flour, milk, salt, and baking powder. Mix well.

  4. Spread spinach and cheese over the pan.

  5. Pour liquid mixture evenly over the spinach and cheese, so it is all covered.

  6. Bake for 35 minutes and cut pan into 15 squares
