Ingredients

  • 6 cups (1500g) leafy greens of your choice

  • ¼ onion

  • 2 cups (500g) shredded carrot

  • 2 cups (500g) shredded cabbage

  • 2 cups (500g) thinly sliced pepper

  • 2 cups (500g) chickpeas

  • 1 cup (250g) feta cheese

Dressing:

  • ½ cup (120g) ranch dressing

  • 1 tbsp (15ml) Sriracha sauce

Optional: ½ cup (120g) sesame seeds for garnish

Directions

  1. To a large bowl, add you shredded carrots, shred/thinly sliced cabbage, thinly sliced pepper, chopped onion, leafy greens, and strained chickpeas.

  2. In a separate bowl, mix your ranch dressing and sriracha to make your dressing.

  3. Add dressing to large bowl. Crumble and add feta cheese.

  4. Mix well.

  5. Serve, as sesame seeds as garnish, and enjoy this colourful and hearty salad!
