Total Time to Make

Ingredients

  • 1 cup (250 mL) whole wheat flour
  • 1/2 cup (125 mL) all purpose flour
  • 1/3 cup (80 mL) sugar
  • 1 1/2 tsp (7.5 mL) baking soda
  • 2 tsp (10 mL) cinnamon
  • 1/2 tsp (2.5 mL) salt
  • 1 large carrot
  • 1 apple
  • 1/3 cup (80 mL) shredded coconut
  • 1/3 cup (80 mL) raisins, optional
  • 2 eggs
  • 1/3 cup (80 mL) oil or unsweetened applesauce
  • 1/3 cup milk (250 mL)
  • 1/2 tsp (2.5 mL) vanilla

Directions

  1. Preheat the oven to 350°F and grease a muffin pan well or line with muffin liners.
  2. In a large bowl, mix the whole wheat flour, all-purpose flour, sugar, baking soda, cinnamon, and salt.
  3. Peel the carrot and gently grate it.
  4. Grate the apple with its skin on. Place the grated carrot and apple, coconut, and raisins (optional) on top of the flour mixture.
  5. In another large bowl, mix eggs, oil or applesauce, milk, and vanilla.
  6. Add the wet ingredients to the dry ingredients and mix until just combined.
  7. Spoon the batter evenly into the muffin pan.
  8. Bake for 15–20 minutes, until a toothpick inserted into the centre of the muffins comes out clean.
  9. Carefully remove the muffin pan from the oven with oven mitts and place on a heatproof surface or cooling rack.
  10. Cool the muffins before storing in a sealed container or bag at room temperature for up to three days. Freeze for longer storage.

Notes

  • If you don’t have whole wheat flour, use 1 1/2 cups total of all-purpose flour.
  • If you don’t have a muffin pan, you can bake the muffin mixture in a 9” x 13” pan for 20––25 minutes.
  • If the muffin is fully baked, a toothpick inserted into the centre will come out clean.
